Chocolate Chip Pudding Bread

I have been a chocoholic since the day I was born.
When I was little, my dad would take my sister and me to Winchell’s, the donut shop where my cousin worked. We always got to choose one donut but my eyes always sought out those yummy CHOCOLATEY, fudgy, rectangular-shaped brownies with a ridged chocolate icing on top. That’s all I ever picked out. Visit after visit I walked out of that donut shop with chocolate smothered all over my face.
And I’ve never liked plain milk. At the school cafeteria my choice of milk was always the chocolate milk carton. One day, however, I mistakenly grabbed the regular milk carton and didn’t realize until I had opened it. I wanted to cry.
CHOCOLATE!
Well this here, this chocolate chip pudding bread is… not a Winchell’s brownie. But it is full of CHOCOLATE flavor! Just not that full of calories. How so very perfect!
I made a little chocolate pudding to make this bread moist. Speaking of which, you know those cake mixes that come in a box and say they have pudding in them? Well when I was younger-er, I opened the box eagerly searching for that pudding. I thought it’d be like in a pudding cup. Doh! That’s when I realized the box said the pudding is IN the mix. But anyway, yeah, that’s where I got the idea to add pudding to this bread.

There’s so much chocolate in this bread. It has chocolate syrup, cocoa powder, chocolate chips, and then to top it all off – chocolate ganache!
I just absolutely love that it’s chocolatey and moist. It’s just perfect for when you want a little lighter chocolate dessert to satisfy your insanely crazy chocolate craving.

Chocolate Chip Pudding Bread

Ingredients
- 1 cup milk
- 1 1/2 tablespoon cornstarch
- 1 tablespoon unsweetened cocoa powder
- 1/3 cup granulated sugar
- 3 tablespoons chocolate syrup
- 1 tablespoon unsalted butter
- 1/2 tablespoon vanilla
- 3/4 cups all-purpose flour
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup semisweet chocolate chips
Note
Tip: After removing from the oven cover the bread while it's still inside the loaf pan with a sheet of aluminum paper and tuck it in over the pan's edges. This makes the top become moist!
Chocolate Ganache Glaze recipe from: Martha Stewart
Directions
| Step 1 | |
| Preheat oven to 350F. Lightly grease a medium loaf pan and dust with cocoa powder. | |

| In a saucepan, whisk together cold milk with cornstarch. Turn heat on to medium, add cocoa powder, sugar, and chocolate syrup. Whisk constantly until it begins to thicken. Turn heat off. Add butter and vanilla. Give it another stir and set aside. | |

| In a separate bowl, sift together the flour, baking powder, and salt. | |
| Step 4 | |
| Once pudding has cooled down slightly, gradually add the flour mixture. Beat in one egg and combine well. Stir in the chocolate chips and combine well. | |
| Step 5 | |
| Pour mixture onto the loaf pan. Spread evenly, if necessary. Bake for approximately 30 minutes or until toothpick inserted in center comes out clean. | |

| Let cool completely. Then drizzle with chocolate ganache. | |
